Although the subtitle hints at rough-and-ready food to go, some recipes in this appealing collection require as much work as any light supper. Duck breast on brioche with wild mushrooms and apples, spicy beef in pita pockets, smoked-salmon pate and a ``French-toasted'' chicken-liver sandwich are definitely upscale cousins of the form. Sturdier offerings, such as spicy meat loaf on kaiser rolls and deviled ham on multigrain bread, will suit those packing for an outing. ``Refrigerator raiders'' will utilize suggestions for combinations of leftover or canned foods. Supplementary material provides recipes for spreads, such as cayenne mayonnaise and herb butter, side dishes, salads and relishes, including sweet-potato salad and red-onion marmalade, and bread recipes like four-pepper bread and brioche.
