Palumbo, a physician specializing in diabetes mellitus at the Mayo Clinic, and nutritionist and medical cookbook writer Margie skillfully explore the latest innovations in diabetes treatment, which include a diet low in fat and cholesterol and high in complex carbohydrates and fiber that allows limited amounts of sugar and discourages artificial sweeteners. The authors maneuver admirably within a prohibitive situation and follow the meal-planning system designed by the American Diabetes Association and the American Dietetic Association. They do well to suggest simple, informal dishes that can be enjoyed by the whole family: cream-of-asparagus soup, lemon-ginger veal, curried beef, Lebanese chicken and rice, nutty orange oatmeal cookies, tomato-zucchini whole-wheat pie. A special chapter, written by a teenager, is devoted to diabetic cooking for the adolescent palate. (August 25)
