Nutrition for the Working Woman

Audrey Tittle Cross. Simon & Schuster, $7.95 (284pp) ISBN 978-0-671-54069-2

Cross posits that each working woman should appoint herself ""chief executive officer'' of ``Home, Inc.,'' and run her kitchen like a business. Her goals: optimal health and well-being for family members, living within a budget and presenting food that is delicious, easy, entertaining and attractive. There are lots of nutrition information; exhortations to cut down on fat, watch vitamin supplements and think about carbohydrates; and charts galore. But after all the hype, Cross offers no recipes or menus and few helpful hints and clear directions to enable the household CEO to find what she needs without wasting timewhich is tantamount to omitting the quarterly dividend.(February)
