Fine's 100 or so recipes for both savory and sweet pies attempt to be wholesome. She uses wholewheat flour exclusively in crusts that range from simple short pastry to cream cheese pastry, almond pastry, and even puff pastry. She lightens them with the addition of baking powder but it's questionable whether whole wheat puff pastry made with margarine can successfully substitute for the real thing. Fine's other inventive recipes include chicken curry pie with yogurt crust, turkey tetrazzini pie with a crunchy noodle crust, onion-apple galette and a sour cream peach pie to die for. The recipes are clearly written and technique is explained in detail, but on the whole this volume is for people who would relish such concoctions as salmon pie with an artichoke crust or a pie with a crust of eggplant puree.
