This cookbook is a testament to the love of good food. Classically trained chef and Toronto restaurateur McNish (Eat Well and Raw) became interested in organic vegan cuisine more than 10 years ago. The book is the result of his years of exploration and discovery, and his obviously encyclopedic knowledge of food. Recipes vary widely and include vegan basics, such as hummus and roasted potatoes; vegan alternatives to traditional recipes, such as tempeh and roasted red pepper sloppy joes, vegan pie crust, and tofu osso buco; vegan pantry items, such as homemade almond milk and flour; and a section of vegan "basics," including cheeses, dressings, and butter. Perhaps the best part of the book is the material that accompanies the recipes: helpful marginalia, an encouraging introduction, a complete vegan pantry list, a list of basic equipment that will be necessary for best results with the cookbook, and a note about what equipment to get "once you become accustomed to this way of eating." Though the photos are few, they are beautiful. (June)
