This is an amalgam of 700 ""favorites'' from two previous volumes, Under the Mushroom and Another Mushroom. The Little Mushroom was Romweber's Dallas restaurant, now defunct, where, from the evidence of these recipes, nouvelle cuisine and the grange supper met on equal footing. Unabashedly, naively trend-conscious, Romweber serves up Brie quiche as well as curried shrimp with Velveeta among the French, Italian, Tex-Mex and American standards. The author calls for plenty of brand-name ingredients and offers scores of ``In a Hurry'' recipes and kitchen tips that, though little more than footnotes, are the book's signal contribution. Elsewhere, the author shows an overwhelming preference for baking fish and chicken breasts that could be quickly sauteedand a more understandable weakness for old-fashioned layer cakes and pies.
