With so much ground to cover, Stern doesn't waste words on introductions or orientationshe goes straight into the grab bag of recipes, most of them simple, many of them classics adapted to whole foods. (For example, fennel risotto is seasoned with tamari as well as parmesan.) From Ukranian borscht to Vietnamese crab omelette, there is much to choose from, and all in all it's a fetching collection, wholly undoctrinaire and pleasantly surprising. Stern doesn't offer meat, but otherwise she's open for business. (August)
