The RV Centennial Cookbook

Evada Cooper, TSTC (http:publishing.tstc.edu), $17.95 trade paper (158p) ISBN 978-1-934302-88-0

Wholeheartedly endorsed by the Recreational Vehicle Industry Association as part of its centennial celebration, Cooper's collection of over 100 road-friendly recipes will give fellow enthusiasts plenty to chew on before packing their coolers. Those expecting culinary fireworks will be disappointed with these can-opening classics, such as a tortilla soup that consists of canned beans, broth, and corn, a jar of salsa, and grated cheddar cheese, or Breakfast Hamburger Helper, essentially a transcription of the recipe from the back of the box. So will those trying to stick to healthy diets–an entire large box of Velveeta cheese goes into Cooper's Incredibly Fattening Macaroni Casserole and even Grilled Cabbage calls for an entire stick of margarine stuffed into the vegetable's heart before it goes on the grill–but avid campers and RV-ers will appreciate the portability and economy of most ingredients. Rounded out with suggestions for games to keep the kids busy, RV trivia, and maintenance tips, Cooper gives campers plenty of options that come together quickly and travel well. (Feb.)
