This superb collection is aimed at the over-50 set, with a foreword by a professor of geriatrics. The emphasis is on single or double servings, as well as recipes that are low in sodium, cholesterol and sugar. However, dishes like pumpkin-apple or chilled tomato-mint soup, romaine-and-strawberry salad and grapefruit salad with watercress dressing will appeal to a variety of age groups. The fine array of main courses includes veal cutlets with Parmesan topping, chicken breast with lemon-caper-tarragon sauce, sauteed scallops with mushroom-herb sauce, speedy shrimp scampi, linguine with marinara sauce and spaghettini with creamy artichoke-heart sauce. Vegetables appear as marinated eggplant and baked tomatoes Provencale. Those who indulge in sweets will enjoy glazed apple loaf, banana flambe and crunchy blueberry cups.
