In a follow-up to their two previous books (The New American Diet and The New American Diet System), the Connors continue to promote a diet that emphasizes vegetables, grains, fruit, fish and poultry. In addition to offering a collection of low-fat recipes, the authors, who are both professors at Oregon Health Science University in Portland, provide invaluable advice about how to wean yourself from high-fat dishes (e.g., ease the transition from whole milk to skim by grading down through 2% and 1%). To help readers reduce their intake of fat, cholesterol, salt and meat and increase their consumption of fruit, vegetables, legumes and complex carbohydrates, they supply easy-to-make dishes that require only basic cooking skills. The flavorful recipes draw on many cultures (Thai Sweet Potatoes Over Rice; Spicy Sesame Linguine with Chicken). Recipes range from from drinks (Strawberry Lemonade) to desserts (Baked Pears with Sherry Sauce).
