Mehta tutors readers on the proper way to roast, temper, and store spices and blends before using them; many recipes call for her own products alongside store-bought ones. Even if readers aren’t able to source the brand spices, they’re in for a treat, as Mehta offers page after page of sumptuous dishes, including such familiar ones as cauliflower and peas, chai tea, and chicken tikka masala, as well as more inspired fare, including a cashew coconut curry, a must-try mango pomegranate salad, and her East Indian take on the Fourth of July, with Indian fajitas, grilled spiced corn, and a simple Indian coleslaw with lime, chili, and curry leaves.
