The 80 international dessert recipes here are competently written and even if choosing a representative dessert from each country named seems excessive, it does guarantee a wide range of dishes. Among them: apple pie with ice cream from the United States, fruit pudding from Lithuania, poppy strudel from Yugoslavia and trifle from England. South America, the Caribbean and Africa don't lack exposure either, with guava and coconut recipes in abundance. Some recipes are rather sketchy, which may present problems for beginning cooks, but, for the most part, this is a tasty way to make desserts. Foreign rights: Jane Rotrosen. October
