Morash here builds on the strong success of her previous Victory Garden Cookbook to take a refreshing approach to fish and vegetables, both separately and together, in a cornucopia of recipes featured on her crowd-pleasing PBS-TV Victory Garden program. She demonstrates how and when to pair up fish and greens with one another--which flavors will bring out the best in others, as in the case of a grilled whole bass with fennel--and also explains what techniques will serve cooks well in their efforts to make these matches work out. The recipes are clear and accessible, healthful and broad in their collective scope, from those that are unabashedly New England-bred (Morash was once a chef on Nantucket, and is still a Massachusetts resident) to others cooked with an Italian accent (various risottos, and scallops soffritto, among others). Relatively few cookbooks have come along to suggest this natural alliance between foods of the sea and stuff of the ground; it makes sense, and it also makes the mouth water. Author tour. (Oct.)
