Catch-Of-The-Day: Southern Seafood Secrets
Ginny Lentz. Globe Pequot Press, $8.95 (128pp) ISBN 978-0-88742-058-0
This collection doesn't convey the traditional distinction of Southern seafood cookery. Rather it is an unspiring catch-all of modern consumer-oriented approaches that happen to include fish. Lentz is often heavier on the dairybutter, sour cream, cream cheesethan she is on the fish, and dishes tend toward the overcooked and indelicate. ""Seafood secrets'' scattered through the book run along the lines of ``keep all seafood cooled on ice or in the coldest part of the refrigerator,'' and there's very little other background text. Poorly organized and executed, Catch-of-the-Day is no catch. Southern seafood cuisine deserves better. December
