In her newest Healthy Exchanges cookbook, Lund offers quick-and-easy, low-fat fare and sage advice for people hitting the highway--especially her fellow RV-ers--who want to do better than Denny's for breakfast, lunch and dinner. Her guide is a collection of""survival information and common folk healthy recipes,"" oriented for the 50-and-up crowd looking for simple ways to stay in good health while traveling. Lund doles out counsel on ways to plan so the trip feels like""home away from home."" She also includes cooking tips, ways to remain active, and lists of food and kitchen equipment needed for the voyage out. Recipes include easy breakfast dishes (e.g., Baked Spanish Potato Omelet, Sour Cream French Toast), soups and sandwiches (Country Chicken Chowder), main dishes (Nacho Crescent Bake; Picnic Casserole) and speedy desserts. All are hearty, all-American dishes, but Lundt favors low-fat ingredients (including low-fat processed spreads) to keep the fat content down. Though these recipes are easy to prepare while on the road, they may be surprisingly heavy for some, and the lack of fresh ingredients may not please all palates.
