Professional caterer David and Muscatine (A Cook's Tour of San Francisco offer international menus and recipes from Narsai's, David's now defunct San Francisco Bay area restaurant. Readers may find the glossary conspicuously uneven in quality, although the volume does not claim to be comprehensive or absolutely authentic. They may also wish to follow menus selectively. Finnan haddie is not at its best as a fish course wedged between oxtail soup and roast beef, but the breads, such as Strass rye and Burgundian walnut, are interesting enough for any menu. Baked caraway potatoes and a quick sauce bordelaise will charm tyro cooks. Saffron-lemon ice cream, Circassian chicken, duck teriyaki and rabbit sauteed with sherry may also introduce new flavors. More ambitious chefs will enjoy crepes souffles Grand Marnier or gnocchi verdi. Wine suggestions are concise and helpful. Illustrations not seen by PW. (April)
