Yarnall, a cardiologist, and Wayne, who practices emergency medicine, provide dozens of recipes for people who like to have their cake and eat it, too--without paying the price in diminished health. Preceding every recipe with fat and calorie counts, they unveil breakfast and tea foods (muffins, biscuits, breads), cookies, cakes, pies, yeast breads and sweets incorporating fruits. Their bent: high-fiber, low-fat, low-calorie and good taste. Apricot drops provide beta-carotene; ``Pared-Down Pavlova'' substitutes yogurt for whipped cream, but doesn't stint on the raspberries. There should be enough chocolate here to tempt, or to sate: ``Dr. Cookie Brownies'' weigh in at 85 calories per serving; the chocolate cream pie indulges in an instant chocolate pudding mix. This is a good primer for the healthy who would rather veer off the straight and narrow path, but won't.
