While not offering a weight-control program, the volume presents nutritional information for those who wish to follow their own plans. Fresh ingredients are important, but there are occasional quirks, such as a fondness for minced-onion flakes and high-sodium chicken-flavored broth mix. While red meat appears in such dishes as marinated lamb roast and curried meatloaf, more abundant are the alternatives: barbecued shrimp, Florentine salmon bake, curried chicken salad, Oriental stir-fried chicken and cheese-and-barley bake. Legumes and tofu are featured in soybean-and-spinach bake, lentil-rice stew, tofu macaroni and cheese, and sweet-and-spicy tofu and vegetables.
