Bluestein and Morrissey (The 99% Fat-Free Cookbook) have done it again, delivering recipes that are high on flavor and way low (less than one gram per serving) on fat in this collection of intriguing starters and finishers. Appetizers are arranged in chapters based on main ingredient, e.g., ``Meat and Poultry,'' ``Vegetables'' and ``Pastas, Sandwiches, and Pizzas.'' Dessert chapters include ``Tarts, Pies, and Pastries'' and ``Souffles, Puddings and Mousses.'' Each recipe includes its yield, e.g., Spinach Quenelles in Tomato Sauce for six, and a per-serving count of fat and calories. Unusual combinations star: Grapefruit, Cucumber and Fennel Salad; Scallop and Cilantro Pizza. The authors prove that indulgences need not be reserved for holidays with a hot fudge sauce that has 47.8 calories per tablespoon and a pie crust made from phyllo dough and pear nectar.
